Mark's New Ventures

Taking a few moments at lunch time today to blog about what Mark has been up to ...

Did you know that he has started taking college courses? Yep! Mark started his first class towards becoming an RN. He is currently taking sociology at Ivy Tech Community College AND, he aced his first paper, receiving a 10 out of 10. Way to go, Mark!

Also, we are once again this year receiving a weekly harvest basket from Cooley Family Farm. This is our second summer. Last year, we were disappointed with ourselves when we let some of the veggies go bad before we could use them all. So this year, we have committed to making use of all of the items in our basket. This job mostly falls to Mark since he does the majority of our cooking. To help keep up with the harvest baskets, he has started a blog. It's called Farmers Market Cooking. You can also find it in our blog list. So far, so good! We're doing a better job of prepping and freezing items so that we can use them later. And it's helping Mark to be more creative with our meals which means that Simon eats more vegetables without even realizing it. : ) Gotta love that!

So that's a bit of what Mark has been up to. Simon is in the midst of potty training and I have been working on preparing for a yard sale. I love the feeling of cleaned-out, organized closets and drawers. And it's a good way for us to add a few dollars to the adoption fund too. We're all glad that summer is here, though Simon doesn't like the bugs that came with the summer weather.
